This homemade no-roll pie crust is absolutely genius. I guarantee you’ll never pick up a store-bought pie crust after making this and seeing just how simple it is! Even if you love my Traditional Buttery Pie Crust recipe, you should try my new game changer.

My 5-Minute Pie Crust, or a “pat a pan pie crust,” actually comes from a traditional Amish recipe taught to young children. It’s perfect for kiddies who want to help out in the kitchen, and for those who love baking but rolling out a pie crust has become too much ache for the hands.

Another bonus? This pie crust can be dairy-free! You still get a lovely flakey pie crust by using vegan butter or oil. If you leave out the sugar, you can make a savory pie with it. And! You can even use gluten-free flour instead!

What Is No-Roll Pie Crust?

No-roll pie crust is exactly what you think. It’s a delicious, flakey pie crust that you magically don’t have to roll! Instead of rolling, you push the dough into the pie pan using your hands. It’s perfect for any pie you are making that doesn’t need a top.

I know I talked about how great and easy this recipe above, but can you believe you can do it all in your pie pan!? Here’s how you make no-roll pie crust(and don’t forget to get the full recipe with measurements, on the page down below):

  1. In a 9″ or 10″ pie pan or baking dish, add the flour, sugar, and salt. Stir together with a fork.
  2. Add the melted butter and water to the pan and continue stirring until the dough clumps together.
  3. When the dough is formed, push it into the pie pan and up the sides, using your hands. You want to try to get the dough at an even thickness throughout. (Check out the video for a step by step guide!)
  4. The pie crust is ready! You can blind bake it or freeze it for future use.Try my pie recipes!

Gemma’s Pro Chef Tips

  • This makes enough crust for a 10-inch (25 1/2 cm) pie. If you are using a 9-inch (23 cm) pie pan, press the dough into the pan no more than 1/8-inch (3mm) thick and discard any extra dough or the crust will be too thick.

  • You can use this crust for a savory pie (like chicken pot pie, quiche or Irish potato pie) by just eliminating the sugar. You can also replace up to half of the all-purpose flour with whole wheat flour for a more robust flavored crust.
  • If you want a richer pie crust, use milk instead of water.
  • You can freeze the pie crust. When you are ready to use, take it out of the freezer, fill the crust with your fillings, and bake as the recipe instructs.

  • This pie crust can be made gluten-free — substitute, 1:1, gluten-free flour instead of all-purpose flour.
  • If blind baking this crust, we highly recommend chilling or freezing the crust for an hour before baking. Read How to Blind Bake a PIe Crust for more helpful information.

  • This pie crust recipe and technique works best for a single crust pie. If you would like a make a 2-crust pie, we recommend using a double recipe of our Flaky Pie Crust or Sour Cream Pie Crust.
  • If you want to use this for a two crust pie, you can make make a cut-out top. First, make the bottom crust and line your pan as instructed below. Next make a second crust in a bowl, shape into a disc, then wrap and chill for two hours. Roll out on a floured surface to 1/8-inch (3 mm) thick and use a cookie cutter to cut out shapes to arrange on top of your filling. You can find more information about this technique here.

How Do I Store Unused No-Roll Pie Crust?

Ingredients

  • 2 cups (10 oz/284 g) all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 6 tablespoons (3 oz/85 g) butter, melted
  • 2-3 tablespoons cold water

Instructions

IMPORTANT NOTE: This recipe has been changed and updated 11/23/20. It now includes melted butter rather than oil. This makes it flakey and buttery. Any previous issues have been resolved.

  • Add the flour, sugar and salt to a 10-inch (25 ½ cm) pie pan and stir with a fork to combine.

  • Pour in the melted butter and 2 tablespoons of water to the dry ingredients and continue stirring until the dough clumps together. (If it seems very dry, add the additional tablespoon of water, a little at a time, until the dough comes together.)

  • With your fingers, press the dough into the bottom and all the way up the sides of pie pan, doing your best to make it evenly thick all around.

  • Now your pie crust is ready to be used! You can blind bake it, freeze it, or use it in any of our single crust pie recipes.

Just a suggestion; I’m planning o use this recipe/method, but nowhere on here does it say what temp/how long (unless I missed it…). You might want to add that. 😉

I made this again recently. Taste just like more complicated pie crust recipes. If yours comes out tough, hard or sticks to the pan, you are over working the dough. It doesn’t need a lot of work to come together. Definitely will make again!

Omg ! i love this recipe I made it twice and let me tell you i am the first person in our family making pies……
i tried apple pie before but i cried while rolling the crust and my mom was alarmed by the amount of butter
this recipe truly states “as easy as pie”

Hi Molly, I revised this No roll pie recipe. It now includes melted butter rather than oil. This makes it flakey and buttery. Previously it had too much water and not enough fat.I hope you give it a try again.
